1/4 cup green onion, sliced thin (50 ml) 2 tablespoons chopped fresh parsley (30 ml) 4 tablespoons fine dry bread crumbs (60 ml) 2 tablespoons maple syrup (amber) (30 ml) 1/4 teaspoon salt (1.25 ml) 1/2 teaspoon pepper (2.5 ml) 1 lb lean ground beef or pork (454 g) 1/2 teaspoon cooking oil (2.5 ml)
Mix green onion, parsley, bread crumbs, pure maple syrup, salt and pepper in a medium bowl. Add ground beef or pork. Mix well. Shape into patties however large you want (1/4 cup makes 8 small patties). In a large frying pan, heat cooking oil. On medium, cook for about 5 minutes per side until no longer pink in the middle.
Festive Maple, Beer, and Pineapple Glazed Ham
1 small onion, sliced in rings 3-4 lbs toupee ham or a ready-to-serve ham (1.4-1.8 kg) 9-15 whole cloves 3-6 pineapple rings 1/2 cup of maple syrup (125 ml) 1-1/2 teaspoon of prepared mustard (7.5 ml) 1/4 teaspoon ground pepper (1.25 ml) 1/2 cup of apple juice or juice from pineapples (125 ml) 1/2 cup of water (125 ml) 1/2 cup of beer (125 ml)
Place onion slices in a shallow roasting pan Place ham on top of onions, fat side up Score the fat in a diamond pattern. Insert cloves. Place pineapple rings on top of ham, using the cloves or toothpicks to secure them Combine the maple syrup, mustard and pepper in a small bowl. Brush half of the mixture over the ham Combine juice, water and beer together and pour into the bottom of the roasting pan Bake at 325 F (160 C) for 1 and 1/2 hours, basting occasionally with remaining maple syrup mixture Add more water and juice if required
Braised Ham and Maple - Slow Cooker
1/2 cup of brown sugar (125 ml) 1 teaspoon dry mustard (5 ml) 1 teaspoon prepared horseradish (5 ml) 1/4 cup of maple syrup (50 ml) 1/8 cup of water (25 ml) 3 or 4 lb of precooked ham (1.4 or 1.8 kg)
Mix well brown sugar, mustard and horseradish. Moisten with just enough maple syrup to make a paste, saving the rest Rub ham with paste Place ham in crock-pot and add remaining syrup and water Cover and cook on low for 6 to 10 hours
Pan Maple Glazed Ham Steak
2.5 lbs ham (1.1 kg) 1 cup of maple syrup (250 ml) 2 oz of water (56 ml)
Method: Boil ham about 2 hours, depending on size. Cool enough to slice. Put small amount of water in frying and add sliced ham. Pour maple syrup over ham. Simmer until water evaporates and ham is glazed with syrup; may need to add more water or more syrup. Watch closely, it may stick as the water evaporates.
